About

An independent journal about cooking over fire

Bark & Ember publishes practical barbecue and grilling guides for readers in the United States. It is a small, independent editorial project.

What we publish

Guides that explain mechanisms rather than narrate a single successful cook. When we tell you to cook a brisket to 200°F, we also tell you why the number matters less than the feel of the probe, and what happens inside the meat between 150°F and 170°F. That way the guide keeps working when your grill, your weather, or your cut of meat is different from ours.

Our subject is deliberately narrow: charcoal, gas, and pellet cooking in American backyards. No restaurant coverage, no gear deals, no recipe-of-the-day filler.

Editorial policy

  • No sponsored rankings. We do not accept payment for placement in a guide, and we do not publish "best of" lists ranked by commission.
  • Food safety is not negotiable. Where a USDA minimum exists, we publish it alongside any lower pull temperature we use for quality, and we say plainly who should cook to the safety figure instead.
  • Corrections in public. If a guide is wrong, we change the page and note the change rather than quietly editing it.
  • Experience, stated honestly. We are cooks and writers, not competition champions, restaurateurs, or certified food-safety instructors, and we do not claim to be.

How the guides are made

Each guide is written from repeated cooks on a kettle, a gas grill, and a pellet cooker, then checked against manufacturer instructions and published food-safety guidance. Temperatures are verified with a calibrated instant-read probe. Where results vary by equipment, we say so instead of averaging the difference away.

What we do not do

We do not sell grills, we do not run a store, and we do not publish a physical address or telephone number. This is a publication, not a business you visit. All correspondence goes to a single email address.
